Our all time favourite is Bill Granger's Ham Lasagne, we've made it a gazillion times and it's a real crowd pleaser, so we're sharing the recipe here with you. I've also made this on holidays as it's super simple, feeds a hungry crowd and can also be frozen for lazy summer nights...
Bill Granger's Ham Lasagne
2 tins chopped tomatoes
1 punnet Cherry Tomato
2 Cloves Garlic grated
3 tablespoons Olive Oil
Sea salt
Pepper
4 Lasagne sheets
6 slices leg of ham
500g fresh Ricotta
300g fresh Mozzarella
100g grated Parmesan
1 tablespoon Olive Oil
Basil Leaf (garnish)
Method:
1. Preheat oven to 180 degrees
2. Empty the tins of tomatoes and cherry tomatoes into a medium sized saucepan and bring to a boil.
3. Simmer over a gentle heat for 10 minutes; add garlic, olive oil and a generous pinch of salt.
4. Lightly grease the baking dish with olive oil and spread with three tablespoons of sauce.
5. Top with a sheet of pasta and then and eighth of the tomato sauce.
6. Tear and scatter 1/4 each of the ham, ricotta and mozzarella over the sauce.
7. Repeat until pasta, sauce, ham and cheese have been used.
8. Sprinkle Parmesan over the top and drizzle over extra olive oil, salt and pepper.
9. Bake lasagne covered with foil for 20 minutes.
10. Remove foil and bake for another 30 minutes or until brown.
11. Cut into six slices and scatter with basil leaves to serve
